Applications

Sugar blend that improves texture, consistency and stability of sorbets and ice creams. Helps prevent the formation of ice crystals, allowing a better maintenance of the smooth and creamy structure of ice creams and sorbets. Suitable for water-based and milk-based ice creams.

Ideal for preparing cold sorbets without pasteurization, allowing to preserve the authentic flavor and freshness of the natural ingredients. Instructions for use

Cualquier preparación líquida o semilíquida, para elaborar helados y sorbetes. Disolver con fuerte agitación el estabilizante en agua fría o leche (Tª <20ºC) con el objetivo de obtener la disolución completa.

Ingredients

Dextrose powder, glucose syrup powder, maltodextrin powder, thickeners: guar gum (E 412) and sodium alginate (E 401), vegetable oils (refined palm kernel oil, refined palm oil), emulsifiers: acetic acid esters of monoglycerides and diglycerides of fatty acids (E 472a) and monoglycerides and diglycerides of fatty acids (E 471), sugar and milk protein.

Storage conditions

Shelf life of 18 months from the date of production of the raw material, with the container closed, under the specified storage conditions. Store in a cool and dry place, keeping the container closed and preserving it from light.

  • Monosaccharide obtained from the purification and crystallization of D-glucose, containing a molecule of water of crystallization.

  • Glucose powder is dehydrated glucose syrup. It prevents recrystallization of sugar in candies and gummies. It gives elasticity and keeps sweet preparations such as pastries, ganaches and truffles tender. It is presented in the form of white powder, neutral odor and sweet flavor.
